Birthday Party Fairy Cakes/Cup Cakes

Ingredients:    
Butter - 100 Gm ( 1/2 Cup- Unsalted, Softened)  
Sugar      - 3/4 Cup (Powdered)
Eggs   - 2 (Beaten)
All Purpose Flour - 1 Cup
Baking Powder - 1 Level tsp
Vanilla Essence   - 1 tsp
Milk - 2 tbsp

Fairy cakes are very simple to make and can be made in a jiffy. Besides the ingredients, all you need is a large bowl, a muffin tin and a sieve.

Method of Preparation:

Take the butter into a large bowl and beat slightly, till fluffy. Now add 1 cup powdered sugar and beat again until pale and fluffy. The texture of the cake will depend on how well the butter is mixed with the sugar. Slowly add the beaten eggs to the mixture. Beat it up until the mixture is very soft. Add vanilla essence and blend again.    

Take flour and baking powder and mix well in another bowl. Sieve this mixture and add this into the butter-sugar-egg mixture and mix well. For better consistency add milk and beat it very lightly. Grease the muffin tins and fill the cake batter up to 1/2 or  3/4 level and bake in a pretreated oven at 180oc, for about 15-20 minutes. The cakes are ready when they turn golden brown on top. The texture of the cake suffers if over baked. Cool the cakes and frost/ice them anyway you like. 

For Butter Cream Frosting :

Unsalted Butter (Softened)

Icing Sugar (Sifted)

Vanilla Extract

1/2 tsp

Method of Preparation:

In a bowl beat butter until fluffy. Sift in icing sugar and vanilla extract and beat till smooth and creamy. When fairy cakes are cool spread the frosting on top of each fairy cake and decorate with silver balls, candies and chocolates of your choice.

Jam Topping

Top the fairy cake with your choice of jam.

Method of Preparation:

Microwave milk chocolate until just melted. Add icing sugar and unsalted butter and a few drops of Vanilla Essence. Spread the frosting on top of the cakes and decorate with grated white chocolate and cherries.
