Ingredients :

   

Country greens or spinach

- 1 kg

Onions

- 2

Green chillies

- 4

Ghee

- 80 ml

Mustard seeds

- 10 gm

Garlic

- 15 flakes

Dry red chillies

- 6

Cumin seeds (Jeera)

- 5 gm

Tamarind

- 50 gm

Tomatoes

- 50 gm

Black gram (Urad dal)

- 15 gm
Turmeric powder - 1 pinch

 

Method of Preparation :

Soak tamarind in water for 10 minutes and extract the pulp, strain and keep aside. Wash the spinach thoroughly. Cut onions coarsely and slit green chillies.

Saute spinach with onions and green chillies and required salt on a low flame. when it is done, make a puree of the spinach. Heat ghee, add mustard seeds, chopped garlic, dry red chillies, and urad dal. When they crackle, add fresh tomato puree and turmeric powder. Add the puree of greens, salt if needed and tamarind extract and boil.
